topped up my wine with water for second ferment what is the percentage now?

3.2 litres 9.5% abv topped up to 4.8 litres :S

that was just the first ferment, ive got it in a demijohn now:)

my recipe was:

juice from 8 oranges and zest of 4 of them.

400g of plums.

700g sugar.

1 tsp nutrient.

1 tsp pectic enzyme.

water to 4.5 litres

Hmm...where did you get that recipe? It looks light on both the fruit and the sugar front to me.

2kg of fruit and 1kg of sugar would be closer to what I would expect for a plum wine.

As Samarith says, most country wines call for 1kilo of sugar to be from the start.
