    Juice to water ratio in TCs?

    For cider i use 100% juice and whatever other additives i may like to try. For wine type wow's i tend to use 3 litres of juice to a demijon plus additives and water. I guess it all comes down to personal taste in the end.

    Branching out and all that..

    When you crush the rhubarb with the sugar in a bucket add a campden tablet to kill off any natural yeast otherwise it may start to ferment on it own. That may not be a bad thing but in my experience it can spoil the taste of the end product. Also i leave it to soak for a week before...

    Just curious did you follow the instructions ie racking for a secondary fermentation ? I recall racking 3 or 4 times with my first Kenridge kit per the instructions. Just finished a sauvignon blanc and simply let it fully ferment out then racked once to fine and clear - as per celler 7 kits...

    Heating mats

    Had one ages ago it was a PITA to use. Changed over to a heat mat, vivarium heat mats are cheap and will do the job fine there are loads on ebay.

    What's up with my vino?

    First thing to do is give it a good shake and see if it starts up again, try and make sure the room temp is around 20c. If it doesn't then taste it. If its not to sweet for you then you could press on with the stabiliser, finings and bottling. . I like dry wine so i would most likely...

    Plastic Demijohn

    I also use the water bottles. If in doubt smear a little petroleum jelly to make joints air tight, works fine for me.

    Brewafternoon: Kenridge Classic Trilogy

    The Kenridge classic kits are excellent, so far i have tried the barolla, cabernet saauvignon and sauvignon blanc. Paid approx £46 for each but the quality is way beyond cellar 7 which is my standard kit these days. I would be interested to know what you think of the trilogy blend...

    Yep the cold will accelerate clearing as well, mine goes on a shelf in the garage.

    Cider Flavour.

    I must admit i don't really like flavoured cider, i am just finishing off drinking a batch of mixed berry which i wouldn't do again. I have made many batches of cider in the past and i always bottle rather than keg. They are in my view at there best once they have been matured in the bottle...

    When to add extra grape juice to a kit?

    Instead of adding grape juice you could always make it short to try and improve the taste. Alternatively maybe use a litre of apple juice to add some additional complexity to the wine. I do use grape juice enricher but generally only with wines made with fruit.

    few Turbo Cider questions

    Supermarket juice is generally made from desert apples which are lower in malic acid. This is the reason i usually add bramleys which are high in malic or alternately a tsp of malic to a one gallon brew.

    5 Litre water bottles.

    I have drilled 5 litre bottle tops and used airlocks without grommets in the past. I just smeared around the base with petroleum jelly which is enough to give them an airtight seal.

    I tend to use at least two types of juice, add malic acid and a few chopped bramleys, pectin and some black tea for tannin and a cider or sparkling wine yeast. At the moment i am using Lalvin EC-1118 for both TC and prosecco clone brews its been very reliable and produces a good end result...

    malic acid

    You want food or pharma grade so that should be ok. it does seem expensive from homebrew shops so I buy mine from ebay at about £7.80 for 500g it keeps so cheaper overall if you use it all year round.

    sauvignon blanc kit

    I have made the winebuddy kit, Cellar 7, Beaverdale and Kenridge Classic kits. I like the Cellar 7 kit but the Kenridge Classic kit does seem a better all round taste. Ultimately taste is of course, down to personal preference.

    Tesco click and collect charge.

    No worse than amazon introducing a minimum order charge of £20 for free delivery and at least Tesco pay uk tax. Inevitable really after their accounting screw up, just have to work around it as its still a good service and free as long as you spend £30 on bits
