    I'm not sure which I enjoy most, the brewing, the making the kit, the talking about or the dri..... Nope, definately the drinking. I do sometimes think it's become more of an obsession than a hobby though.

    You did mention WLP051 which like I said is meant to be the same strain, so I suggest trying that. In fact I shall be ordering some soon to give a go.

    The best yeast I've used for pales, apa's, ipa's etc has been Wyeast 1272 which is supposedly the same strain as WLP051. More malt flavour than US-05, still lets the hops shine and floculates a lot better. I've recently made a few with WLP023, I'm not keen on the taste, I find it adds a sulphury...

    single grain single hop

    Not a SMaSH but I'm currently drinking a brew made with 96% Lager malt and 4% Caramalt, all Saaz and brewed at 18 degrees with US-05. I was intending some kind of fake lager but it ended up along similar lines to Summer Lightening, just slightly sweeter.

    I have the opposite problem in that my SWMBO will swear blind she's told me something and I'll be equally adamant that she hasn't. Personally I think it's her fault for talking all the bloody time, there's only so much listening a man can be expected to do!

    Mine usually come out around 5-6% though I'm now making an effort to brew them a bit weaker so I can drink more.... or is that drink the same amount but not fall over?

    List your favourite Liquid Yeast (wyeast wlp )

    Wyeast 1272, I've brewed a few APA's with this. It drops out a lot better than US-05 and gives more a more characterful flavour while stilll letting the hops shine.
