I've used coriander in wheat beer and a summer ale, nice with some bitter dried orange peel too. I used about 12 g too in a muslin hop sock in last 5 mins of boil and 30 whirlpool. Not used the lemon grass though so I'll follow your progress with interest thumb.

make a small drain tank?, you can buy a submersible pump that has a float switch and pump the water to the upstairs drainage system. a lot of cellars have such a pump installed.

Hook Norton "off the hook" IPA is a cracking pint on Draft, and in the winter "12 days" is a lovely drop too!
