    Can't make a hoppy beer

Hold up, surely this is the point? A chap attempts a home brew that doesn't turn out as expected and wants to find out what could have gone wrong? This is the process of learning from mistakes and developing. Ive had this happen to me, my beers have been designed to be well balanced but then on...

I do this. "check out how good I am!, yeh that's right, I made this, worship me, bring me praise!"

    Can't make a hoppy beer

This is the problem ive found, you want to keep them in a sock/bag to avoid issues like sludge / lack of clarity later on, but then what happens is the hops are not exposed to enough wort to transfer maximum flavour /aroma.....i think what you need is some sort of hop blanket where it's thin but...

    Can't make a hoppy beer

Am I reading that wrong ? 3:1 surely? Anyhoo, presume you mean that your water needs more sulphates than chloride?

    Can't make a hoppy beer

Understand, my problem is that I'm not tight enough. This home brew malarkey was supposed to stop me buying beer but I still do, so there's no real cost savings at the moment, probably the opposite!

    Can't make a hoppy beer

Really? You never been tempted to see what all the fuss is about? The Elvis juice and the jet black heart are worth trying if you happen to pass some on a supermarket shelf

    Can't make a hoppy beer

If anything, the hoppy punch tends to diminish with time

    Can't make a hoppy beer

Agree with the post above about the dry hop amounts, they seem pretty good and aroma should come out. Re flavour, perhaps add more to your 10- flameout timeframe and ditch the 15mins. There's plenty of posts on here about making a hop tea (at 65oC) too which you may wish to try

    drinking beer

I'm no expert on this but my understanding is that you can damage yourself by regularly drinking excessively even if you're not pissed. I rarely get to the point of being pissed anymore but I wouldn't kid myself that my drinking doesn't do me any harm

    drinking beer

Most beers I drink are over 4%. Got a 5% pilsner and a 6.5% IPA on the go atm but that is home brew. Yeh if I go "out" then yeh you're looking at a beer every 1/2hr which can mean your session involves maybe double figures consumption (god bless my liver when I go to newcastle later this mth...

    drinking beer

I tend to sup 3-5 pts at a time. Probably 3-4 days a week. So between 9-20 pts a week. So yeah, for me, 40 pts would be excessive

    Which pale ale?

Good choice, my first brew was the Youngs APA and I'm currently drinking the Youngs AIPA. Out of the two I'd say that the APA slightly edges it imo

    Madeleine McCann

Interesting documentary on bbc1 now, doesn't seem to be casting the McCann 's in a great light though!

    Carboy questions

I think you can get carboy carriers but the last time I looked they weren't cheap, around 50 notes or so

    Carboy questions

Re.your first question, hop sock on a string. People do this for normal FVs too. Two questions I wish I'd asked before buying one: Will it fit in the brew fridge? How are you going to shift it? Re the 2nd point, do not underestimate how heavy these things are when full! Mine is totally...

    Guinness west indies porter

My attempt was similar to the FES except it was thinner (I should have maybe mashed at a higher temp) but everyone who tried it enjoyed it, it's probably been my best brew so far

    Guinness west indies porter

Ive just tried a bottle of the Guinness foreign extra stout and I now reckon that the recipe above is for that rather than the west indies porter. They're slightly different, the former being smokier in my opinion, presumably die to the large amount of brown malt

Idiots guide to hydrometer use please

yeh it should be! Can't say I always have though, my runnings normally come out at around 65 0C so at that temo 0.99 would be the magic figure according to this: https://www.brewersfriend.com/hydrometer-temp/
