    Help please re FV

I like your style Roadrunner! I've used Wilko's Gervin yeast and it worked well for me.

    Hydrometer readings - what next?

Don't apologise we're all here to learn, yes you do need a campden tablet, it's to stop the oxidation. The one at the start is to get rid of any airborne nasties or ones on the fruit before you pitch your yeast. As for how long before it's ready to drink, well you could drink it now but you...

Novice trying brewing for second time

If you are after a good red wine kit bristolsparks. I would recommend The Range's Make Your Own Red wine kit, at £24.99 it's a bit dearer than some but IMHO it is well worth the money, ferments well in about 10 days I let it clear for another 5 days and it can be drunk straight away but does...

    Slow start

Has the fish tank heater got a thermostat? With that and the radiator and possibly a sleeping bag you could end up with the opposite problem, your wine getting too warm for the yeast.

    Make hole in lid?

'bristolsparks' putting two 6 bottle kits, in other words 10 litres, in a 25 litre FV IMHO is too much head space, you need a smaller FV or use two DJs. The use of an airlock in a 25 FV depends on how volcanic the primary fermentation is and whether it can give good CO2 cover quickly enough and...

    Help please re FV

The only problem you might have is the ABV of your finished wine, will it ferment out to 16%+, you don't say what yeast you are using, this will need a high alcohol tolerance yeast. I would suggest getting some 'Restart' yeast or similar and some 'Tronozymol' nutrient, it is a bit like the devil...

How do you kill champagne yeast?

It might be that you need to ferment it right out before racking off and then adding stabiliser. then you can back sweeten as you require. Whilst the yeast is in full ferment it can be difficult to kill, if you've weakened it by fermenting it right out it might succumb more easily.

    Wine flavoring packs?

Is this the sort of thing you're after : http://www.the-home-brew-shop.co.uk/acatalog/Cherry-Extract.html#.VD8bB1cXOTI I just Googled 'wine flavouring products.

    Have I messed up ?

How long since you added the stabiliser and finings? Have you moved it to a cooler place? It seems to me that you just have to wait, if necessary let it ferment out, take a hydrometer reading now and leave it for a week then take another reading, if it is down to something like 0.990 then it's...

Eggy Smell - Beaverdale Rojo Tinto

My daughter complains that her room always smells like that! Well ever since I started putting the wine to ferment in the airing cupboard in her room anyway!

    Range Rose kit

Do you have any lemonade/cola etc 2 litre bottles? they are just great for storing your cleared wine in, as Chippy said the head space needs to be a minimum. I take it you have made a 30 bottle kit, in which case you need 11 2 litre bottle, 12 to be safe, and if its the same as the white and red...

    reducing volume of demijohn??

I agree with Chippy, when you add water to a 30 bottle wine FV you use tap water and don't boil it all and let it cool so why when topping up, but if you are concerned about diluting the alcoholic content, the amount you lose is really not that much, then use some sugar dissolved in water at the...

    Hydrometer readings - what next?

Degassing after racking off into a fresh sterilised DJ is simply putting one hand over the top and picking it up and giving it a good shake, put it down and take your hand off the top slowly to release the gas and do it again several times until the gas is released from the wine, it helps the...

    Fizzy red wine

Do you have a hydrometer? They can be bought from places like Wilkinson's for about £3, well worth the investment. You can test your wine to see if it has fermented out, they are easy to use and a test/trial jar is handy if you are fermenting in DJs, it's just a long glass or plastic tube...

    can I sweeten???

I suppose at the end of the day it depends what you want your wine for, you can make wine of around 10-12% for 'everyday drinking for BBQs etc or use the turbo yeasts to produce 20%+ and have your BBQ guests admitted to hospital by a fleet of ambulances and have to clean up the mess!!! Back in a...
