Hi,
Just finished cleaning the range rose kit and I've just racked off into a second FV.

As I don't have any bottles ready yet (or not enough anyway) plus the fact the Rose is a little harsh at present (I've heard it gets better in a matter of weeks) can I just leave to age for 2/3 weeks on the FV before bottling? Would this have any adverse effects?

Also, can I sweeten if needs be at this stage? Or should I have done this before I added the finings?
 
Did you add the extra sugar as instructed?

The instructions tell you to add 750g of sugar to back sweeten after you have stabilised and degassed it, i decided to leave it dry as Mrs Tea doesn't like sweet wine and i am glad i did it would have been sickly sweet if i had followed the instructions.

The Mrs thinks it could do with being a little sweeter though and as the instructions say to add the extra sugar before the finings, I was wondering whether I'd missed the boat somewhat!
 
You can back sweeten once its clear this is what i did with the first one, i like (used to like) a sweeter wine but Mrs Tea likes it dry, i put 1 teaspoon into the bottle (1.5 litre) i was going to drink and gave it a good shake just before drinking it, this did the trick.

no you can still added it. but do it in stages 750g is a lot to just sweeten

Also leaving once clear for a few weeks in the FV is fine to do too?
 
When you ferment the layer of CO2 in the space between wine and lid protects it, once stabilised and degassed it no longer exists, you read a lot about head space in the various forums and most members leave as little as possible, in a FV there is a lot of head space so leaving it for several weeks is probably not a good idea.

You say you don't have enough bottles, why not calculate what you have then buy a 5 litre spring water bottle or two, fill them to the base of the neck then bottle the rest, you can then bottle from the 5 litre bottles as the glass bottles get emptied.
 
Do you have any lemonade/cola etc 2 litre bottles? they are just great for storing your cleared wine in, as Chippy said the head space needs to be a minimum.
I take it you have made a 30 bottle kit, in which case you need 11 2 litre bottle, 12 to be safe, and if its the same as the white and red kits you can even drain all but the thickest of the sediment into a separate bottle and let it clear, I have actually managed to get 11 full 2 litre bottles out of 30 bottle kit, but then again as SWMBO says I could teach Scrooge a thing or two!
