    41 IBU is a little high for a Blond especially if you don't want it too bitter, according to Brewers Friend a Blond should be 15-30 IBU so I would go with 25g @ 60 mins and 21g @ 5 mins. Should give you 25 IBU and more aroma from the hops.

    It had never even occurred to me to go for option 2, I will give that a go next time and see how much wort I can salvage to go back into the FV. I had also been reading that during the boil discarding the foam should reduce the amount of hot break trub left in the kettle.

    I wanted to have a go at using Kölsch yeast, so threw together a blend of Munich, Vienna, pilsner and wheat malt. Lovely malt flavour and very refreshing but I suspect this is a little complex for what a 'normal' Kölsch would be, shame the yeast went crazy and this ended up at 7.5% ashock1

    Chocolate Ingredients for a Stout

    I did this with my latest stout but the whole bar (125g?) and also some chocolate malt, lovely chocolate taste without being overpowering or too sweet. If you shop at Lidl they randomly have 95% Cocoa chocolate bars far cheaper than everywhere else (except perhaps Aldi)
