    Well the bitter seemed to go very well yesterday, ended up with 14.5 litres @ 1050, with a BHE of 70%. Good colour, and nice and clear too. Pitched this morning with S-04.

    As far as mls v grams is concerned, you may choose to add 10 ml of a weaker syrup, or 5 ml of a stronger one, but at the end of the day, it's how much sugar is going into each bottle that matters here.

    I use a priming syrup too, I like that you can meter the amount of sugar per bottle accurately this way. But I think variations in each brew probably count for more. 4.2 g per bottle sounds a lot to me. Certainly I only use about half that amount of sugar; I vary from 1.7 to 2.3 g per bottle...

    Was going to go for a big brew today, but have been slightly put off by the weather; it's a bit warm! Not ideal if you have no cooling facilities. I'm thinking it might be better to do a quick low-tech weiss today, and leave the more delicate bitters until next week whwen it's a bit cooler.

    Second try of flavoured wheat beer, this time the tangerine. It's there, but a tad under-powered. I thought the coriander was spot-on, but this could have done with another 50%, I think.     I racked off my Vienna, gravity was 1010, don't imagine it will drop much lower (and I didn't expect it to drop this far), so will be coming in around the 5.1% ABV mark I think.
