    Once I get to the stage of having a fully fitted and working tank complete with sight tube, I will have fun doing these final touches, although I may go for a score mark rather than permanent marker. Plenty to do until then though. Funding the new vessel, for a start.

    Managed to get 25L at 1.043 safely in the fermenter. Nothing much of interest during the brew - Bobek's were quite powdery like leaf tea in parts, but smelled very nice indeed. Used US-05 and a power drill paddle for first time.

    I reduced the coppering hops by 10g to reduce the IBUs a little. And I'm going for US-05.

    I'm annoyingly good at leaving beer to ferment and condition, on the whole. But I do aim to brew again this week if possible - a TTL style beer based on Wheeler but with WGV and Bobek. Reckon that'll do? Might steep a little Bobek too. By the way, haven't got a spare 50L stainless knocking...

    Siphoned into a secondary at 1.010. Smells and tastes pretty good considering it was grain four days ago! I still have 24L. Time to leave it be for a week or so. TTL version next up!

    My local microbrew uses Nottingham in all brews apart from APA, in which he throws US-05. I think I'd have to use different yeasts in the exact same recipes to have a view, but then again, I'm sure my mash and fermentation etc... etc... all vary by tiny degrees, so it's anyone's guess really...

    Morning. Fermentation barely starting just seven hours in, but the signs are there and the streaks of break around the tub look pretty cool. I'm hoping for some comforting airlock burping later to accompany me through another thankless day slaving away at the screen!

    Mash on to fermenter will be about 5.5hrs, that's about normal for me. I could reduce it by an hour by having 60/60 mash/boil instead of the 90s, but it's always worked for me this way and so I don't want to mess with it for the sake of an hour, really.
