    Lychee/lychee & pineapple TC

Sounds interesting, may try it. Just made a lychee turbo cider using AJ and AJ & Lychee juice. Lychee Puree sounds like a much better option, where did you get it from?

    Apple and Lychee turbo cider

Let ferment down to 1.00 making the brew around 6.5%. Bottled around 2 weeks ago, sweetened with 1tsp of splenda and 1tsp sugar to carbonate. Will leave for a few weeks then taste. Had a cheeky taste when bottling, quite nice with out aging though very thin, would recommend using real lychee's...

Using juices to make wine / cider

Get some juice, stick it in a DJ, yeast and sugar if needed. This is a simple and easy way of doing it, though I found results are usually poor. Experiment with different juices, I usually add some yeast nutrient and a cup of strong black tea to it too. Id recommend the 100% juices as others...

    Apple and Lychee turbo cider

Just put this into the secondary, the reclaimed yeast failed to repitched with some youngs champagne yeast and left fro 2 weeks. OG has dropped to 1.000. Got a mouthful when siphoning and am impressed all ready. Will leave for another few weeks on in the secondary then bottle and age for a few...

    Ginger beer

Just bottled my first lot of ginger beer let it ferment for a month, then into secondary for a month. Tastes very lemony with a slight kick of ginger after. Made another with less lemon in it as well as not placing all the ginger and lemon in the DJ with it. If I were to repeat the same recipe...

Just racked my first batch of mead?!

Does it not need to be left to age for a few months? Did you leave it to ferment longer than the last batch?

Something like sawdust in cider left to age?

Yea thats what it looks like, just a lot thinner and not as much. Made about 60-70l from apples, but did it really lazily and tasted watery. I basically threw apples in a huge container, filled it up with water, added pectalose for a week then added lots of yeast nutrient and yeast and left it...

Something like sawdust in cider left to age?

Put some of the cider I made last year in the shed and forgot about it so been aging for around a year. Just went to check on it and something has started to settle on the top of the cider which looks like saw dust? Any idea what this is and would it be ok just to siphon and filter it out?

    Ginger beer

Just started off a DJ of this, had to add a lot more sugar than suggested, though I used brewers sugar. I used: 300g ginger 1 Lemon 1 Lime 500-600g brewing sugar 1 tsp Cream of Tartar 1 heaped tsp yeast nutrient 1 tsp Wilkinson's Ale Yeast og ended up around 1.042 with a load of stirring...

    StrongBow Clone

I believe they make it to 15-16% then water it down, was on the program 'how stuff is made' I think its called. Ive made a 10-11% tc before and it was the least enjoyable cider ive tried, tasted of apple then got a hit of alcohol after.

    Blackberry Wine Question

I used the 'Wilko Gervin Univeral Wine Yeast' from wilkinsons. Been working at around 16-18 degrees, kept under the combi boiler in my room, though that is a guess as haven't measured it, and has likely been quite variable. Ill upload some pics later on
