just about to pitch some "yeast nutrient" into my TC and first thing I notice is its got a pink tone to it, whereas normally its dead white.

Mix it with a bit of hot water and it smells of amonia! like what fermentation stopper/stabiliser does.

Is this normal, must admit I dont normally mix it with hot water so maybe its always smelt like that..
 
Diammonium phosphate is a yeast nutrient. I'm no chemist but the smell you've described wouldn't instinctively bother me in a nutrient. Not sure what stabiliser smells like to be honest, I've only used it once and I've forgotten!
