should i be storing my yeast in the fridge .....?
i bought packets of it from the lhbs and never thought about chilling it..is is stored on the shelf in the shop for months i presume .... :wha:

Yes . . . or the freezer . . . get them out the night before

And that is one of the reasons why Kit yeast doesn't perform as it should. Good LHBS should either have a rapid turnover of yeast and/or keep it in a fridge/freezer so that it is in best condition for us.
 
On the subject of yeast what is the beast yeast for a stout brew? :drink:
 
Dry - Safale 04
Wet . . . Take your pick I like Wyeast Irish 1089 Brewlab High Gravity is another good choice

For high gravity stouts then Windsor/Nottingham are good workers - S04 tends to crap out IME
