simple is the right yeast important for kits?

for example lager kit have bitter yeast because of the better heat tolerance, will using a lager yeast make a better brew.
also with a branded yeast be better over the yeast that comes with the kit, coopers use a bitter yeast with bitter kits but would there be a better yeast to use?


AND simply should i just not **** about and use the yeast in the kit :D

I don't think there is such a thing as a bitter yeast - it's an ale yeast. You will make better lager with a lager yeast but only if you can ferment and condition at the cooler temperatures. Since most people can't do this, that's why most lager kits come with ale yeast.

I've noticed that kits tend to come with only 5g of yeast whereas branded packets are usually 11g. Kits often stick and I think this might be due to underpitching. So I have no doubt that using a different yeast to that supplied can improve the beer - it's also an easy way of customising a kit.
 
Yeast plus temp control is possibly the first 2 most important factors in good beer and which as kit brewers you still have control over . ;)
