Hi folks. I keep reading on here that it is a good idea to ditch the yeasts that come with kits and use a better quality one like Nottingham or Safale. Exactly what improvements will this make? and does it apply to two-can kits as well as single can kits.

It also depends on what kit it is, and what style of beer you are going for.

A lager-type kit can benefit from something like Safale US-05, as it can give a cleaner flavour but I've always had good results from coopers kits just using the supplied yeast.

If you haven't done the kit before, I would always give it a go with the kit yeast first, so you have a reference as to how the kit maker intended it to taste.
