Hi Everybody,

I'm going to start brewing again after a 20 year lay-off, since I'm about to retire. When I brewed in the past I never quite resolved the question of, if and when, to skim the yeast during the brewing process. What is the general consensus of opinion on this subject?

Thanks Eddie,

I tried skimming once and the beer ended up not as bitter as I wanted and stopped skimming after that. It's just that there was a lot of scum on the top which dropped to the bóttom and I wasn't happy about that, but it seemed OK. Some of the recipes that I had said skim and some didn't and, since things have changed so much, I wondered what folks do now.
