Woodfordes kit advice

I am planning on making up my woodfordes sundew kit this afternoon. After looking at the instructions it says to ferment between 18-20 degrees. Given the current unseasonably warm weather in Scotland I feel this may be difficult in my flat. I should however to easily keep the fermentation below 24. My question is should I just batter on with he supplied yeast or go and buy a separate yeast which is documented to be more heat tolerant? I was looking at safale-us 05 data sheet which claimed the range of 15-25oC. I will put the fermenter in a cool water bath etc to minimise the risk of high temperature but as my flat is pretty warm I want to give it the best chance.

Any advice anyone can give would be great. Many thanks.

Hi

I would suggest to keep with the supplied yeast, pop it in a water bath wrapped in a damp towel. That will keep your temp approx 2 degrees lower and should be fine. Keep replacing the water with cold and submurging the towel to keep it cool. Thats been my trick for the last year and has worked a treat, just keep checking temps and im sure you will be fine.
