I have a Blonde Ale to Brew that calls for WLP007 which is quite high attenuating, the problem is I don't have any though and I already have too many yeasts ready to go in the fridge.
I have a couple of packs of US05 as standby which I thought I may use but wonder if the result may be a little boring.
It then came to me that perhaps I could use some WLP002, which has the same flavour profile as the WLP007 but is 10% less attenuating and I could maybe add the US05 after perhaps 4 days to drop the gravity a little more and dry it out?
Any thoughts/experience/prior knowledge on this?
