hi folks,i'm fermenting a s. hughes dark ruby from g.w. book.for the yeast i used w.labs 002.is this a monster?it's gone ballisitic!is this normal for this yeast?you comments please.ww.

Think "dennisking" uses this yeast strain regularly :hmm: :hmm:

Yep t'is a bloody good strain, reputed to be the Fullers strain.
 
Agreed, used for the first time in a RIS, and it went like a rocket. Even the starter was trying to climb out of the jar. Was impressed enough to buy another vial of it for general use (I assume the stuff left behind in the RIS will be knackered), as I found that dried SO4 and I don't get along...

Sounds like you reclaim and reuse your yeast? Me too - do you find WLP002 an absolute b**ger to rinse?! It's so flocculent I find it hard to separate nicely from the trub no matter how hard I shake it up.
 
Haven't tried yet :) I ditched the stuff from the RIS, as I assumed it would be knackered having fermented from 1100 to 1020. I have a new vial in the fridge ready for my next brew, and I had hoped to reclaim the yeast. You're making me nervous now :D
 
I use WLP004 and WLP007 for my ales and I've found that they ferment quite slowly and gently, with very little krausen and with slow but regular airlock activity. They both finished nice and low though at 1010. It's interesting that the WLP002 is much more vigorous.

It didn't stop me doing it! :) I doubt having old trub in the yeast will affect it, I'll just need to have a bit of an educated guess about how much to use in the next brew.
