I popped into my lhbs today to get another coopers stout kit, they had safbrew T-58 yeast at 50p as they were 2 weeks past the date so i picked one up. My question is would it be a good choice for my coopers stout or should i stick with the one that came in the kit and what differences should i expect if i was to use it instead of the one supplied?

Thanks Glen

this yeast is supposed to produce a high amount of esters, which i believe means (to laymen like me) fruity flavours.

I have ordered a pack to go with my st peters ruby red ale kit.

i wouldn't like to say (as i am a layman) if it would be appropriate for stout. In my opinion, i wouldn't be convinced, but a) i don't know much about stouts (only ever done 1 stout kit, used Nottingham) and b) Robsan knows much more about brewing than I do.

Certainly worth a try!

I havent actually used t58 in a stout but it was lovely in a dark ale. I've used burton ale yeast recently which reminded me of t58. Lots of peppery, clovey complex esters. Give great character to darker beers. T-58 also drops very well. I would definitely use it over a kit yeast.
