I agree that the Wherry is excellent - but it has taken 8 - 12 weeks of cold conditioning for mine to be top class. You don't need to change the yeast but make sure you keep the fermentation at the right temperature as it has a habit of stalling.

Carbonation is very much a personal preference, I would tend to batch prime with 80/100g for bottles as I don't get too hung up on it.

I don't user straight sugar, I tend to use dry malt extract (light) or brew enhancer in the same quantity... just because If I am being picky about yeast/water used then I don't want to have any possibility of causing any "off" flavours at the final hurdle.

Most people would tell me that it's completely pointless due to quantities used etc but for £4 per bag doing 6/7 brews it's an extra 58p per brew. Not exactly breaking the bank.

You don't want to prime with any more than half a tsp.
I primed with a tsp once and the fizz masked the flavour massively.

Just to add another choice in there Woodfordes Nelsons Revenge is the best pint i've ever brewed/drank, beats the Wherry hands down IMO.

The Wherry is very nice though, i have a keg and 6 bottles conditioning in the warm at the moment and will be going in the shed when the temps come constantly above 0c.

This was another which is good, I have a barrel of each maturing made in the way described previously and are both nice drinks. But the admirals only makes 18l to start with but is very good.

I usually ferment in my airing cupboard at around 22 deg on average. I thought about conditioning in my shed, but doesnt it get too warm in the summer months?

Probably a little warm... find a place at 18/20c as initially the brew when fermenting rigorously creates a lot of heat it's self.

Never tried it ian but I did try their IPA and didn't like it as much. I believe the St. Peter's and woodfordes kits are all made by munton's in reality.
virtually all the 3kg 2 can kits are!

+1 for the wherry did a few during a lazy faze bout 13 years back they where pleasant!

+1 on the Nelson's Revenge over Wherry. I bulked it out to 28 litres ( and 8.8% ) :thumb: , it was really good :drunk: .
