hi guys, im worried about my wheat bear. i have two on the go one with mangrove jacks wheat yeast and one with danster wheat yeast. i started the brews off fine at 20oc and they were bubbling away fine but then i had to work away overnight and the heating was off and i came back and they were sitting at 13oc. will this result in off flavours do you think ? they were still bubbling away very very slowly
 
It might produce some 'different' flavours but hopefully not anything unpleasant, some wheat yeasts will produce more spice/clove flavour at cooler temps and more fruity banana type flavours at warmer temps but it depends on the particular yeast. Generally you should be OK if it hasn't gotten excessively hot.
 
Not at all, quite the opposite. Some types of off flavours can be produced when the yeast gets too hot. I am unaware of any off flavours that are produced at cold temps in fact you'll get a cleaner tasting beer. I'm not a wheat beer maker/drinker but I understand In wheat beers you my actually want some of those 'off flavours' (banana esters/flavours etc). As long as it's still fermenting, albeit slowly, and the yeast hasn't dropped out of suspension due to getting too cold, your good
 
nah its the opposite end of the scale that i was worried about, it got too cold but youve put my mind at ease
 
My wheat beer I used mangrove jacks did the same as you it stopped and had to give it a stir and warm up I have just had to have a cheeky one ad I couldn't wait any longer, it has a lovely chewyness a slight spice and a hint of banana this has been locked in a cabinet now and the wife's hidden the key because I want to let it condition properly and if it's out on the shelf there will be no stopping me from doing what I did with the stout lol. thats exactely the answer i was hoping for. im just hoping it was warm enough at the start to develop the flavours. got the heating back on now im home too
