EDIT: if I remember rightly, if you split it in two it should have seeds inside, not too disimiler to chilli
This is correct. Its does not taste fantastic tho. I remember as a kid, i used to gather lots of the seeds inside them and grind them to powder. This makes a great itching powder! Sweet memories, haha :thumb:
 
Rose hip is nice when turned into a syrup. As long as you check your variety is safe to eat you can jam or syrup with them. They are very high in ascorbic acid (vit c) so sour unless you add lots of sugar. Hence the sugary jams and syrups.

The rose in the OP is the Japanese Rose (Rosa Rugosa) a species from coastal China, Japan & Korea. They have single flowers, usually deeper (sometimes purplish) pink, with slightly tissue-like petals. The hips are several times larger, flattened and orange. The thorns are thin and innumerable, and the plant almost always forms a bush.

Both dog rose and Japanese rose hips can be used for rosehip syrup, wine, jelly or marmalade (as can hips from any cultivated rose). In most cases, dog rose hips are preferable as the flavour is in the skin, and smaller hips give you a higher proportion of skin to seeds, however Japanese rose hips are easier to deseed & slice for marmalade.
 
Further to that, medicinally they are pretty **** hot... Really high in vitamin C, and particularly hood for heart health (due to high antioxidant levels). I once failed to make wine from rosehips... Can't comment in the flavour of the brew!
