Taste wise my Kölsch is pretty good, and I’ve ordered the grain for another batch but as suggested by @.Peter. I will be adding 5% Carapils to the grain bill to hopefully give it a somewhat better head (also I really must remember to add the Irish moss to hopefully help with clarity). Ah well live and learn, and it’s still very drinkable despite its issues.

For comparison how it should actually look I have a long way to go.

I’d never tasted, never mind brewed a Kolsh before. What I did manage to do was leave it lagering for nearly 2 months. It was a simple grain bill as well so perhaps you’re trying it too soon.

You could well be right Kölsch is in theory a really simple beer, with a simple grain bill, light hop additions etc. which of course means no where to hide any flaws, but time does seem to solve an awful lot of flaws (I.e. my larger I brewed last year improved immensely after six months in the bottle).
 
Today is the first day I’ve not been in the pub since..err..

Anyway, I had a few jobs to get done and I’m preparing my first brew day of the year for tomorrow. My wife brought me a few beers while taking the old lady shopping so I’m going to try these three she got from Hone Bargains I think. The brown ale is okay, mostly dark caramel and toffee malt.
