Belgian Tripel

Big fan of making Belgians. What's your yeast, ABV, notes you're looking for?
I'm always going big on those. I use MJ M-41 mostly and get the usual flavors. I "clone" the Westmalle Tripel. Tastes nothing like the original but it does taste like a tripel.

I’m using M41. ABV on this occasion will be at the lower end of around 7.5%, I’ve brewed 9% and 10% but wanted something a bit more drinkable. I want something that’s a little fruity, a little spicy, maybe some clove (I usually go more banana), good but not assertive bitterness, and I’d like a little more malt than I usually get in my Tripel.

Decided on some wine for a change and this one's quite nice. All this talk of Belgians just reminded me that I've got some Afligem in the back of the beer fridge. Mmmm.

Cool. I have experienced the above flavors using MJ M-41. I keep overdoing the hops by not taking the aa seriously enough. I will next time though.

Had a couple of pints of my Mild, and thought I'd call it a night, bit I went out to the garage to check I'd shut the gas off and a pint of my old ale magically jumped into my glass. Spooky!
