Found a "professional" and local IPL. I have made a few but have never had a brewery version. I think they used citra, it's great but I was hoping for some noble hops as the tagline is drink like a german.

I was wrong Ariana and Mandarina Bavaria. Hmmm I might need to use these two more.

What's the hop combo like any flavours coming through? I have wanted to try them together.
It’s fairly gentle but it is detetable especially once the beer warms up the yeast does dominate, but you do get a nice earthy floral undertone to it it’s subtle but very much there. I’ve brewed a few beers lately with these two in various combinations and am really coming to appreciate them (as much as I like some of the modern American hops they are very much in your face and absolutely dominate).

I was thinking of giving Gretel a try with a beer I have planned. What temps did you ferment at
I managed to keep it at 25°C, I would like to have gone higher but it was damm cold in early April and there was only so high I could go. i am tempted to do another batch this summer and just let the yeast ride out at what ever temperture it gets to.

Girlfriend In A Coma IPA @ 6.2%.

First tastes are what i can only describe as a little like when you get hair spray in your mouth. Not full on, but enough. Any thoughts on off flavours?

My tastebuds quickly adapt and towards the end of the glass it isn't as bad.

Its only 46ibu but only 22 days in the bottle.

Is gretel a kviek yeast
It’s a Hefeweizen Yeast, it works well at high temperatures (actually you arguably want to use it as high as possible) but that’s partly because its the esters that give the style its distinctive flavour typically a lot of banana and depending on the strain cloves as well. If you like the style it’s a fantastic yeast to use in the summer if you don’t have temperature control.
 
Salem Brewery (Bateman's small batch brand) Beast from the East.

Very nice. Cascade, Chinook. I have been trying a few citrus pales recently. Anything with citra, equinox etc is too much for me but this combo is just the right side of the beer / tropical pop axis.

Hair spray? Is that an alcohol flavour like nail polish remover? Fruity but also sharp? That may be fusels. Did you pitch the yeast into wort while it was still too warm?
I'm no expert in fusels but it sounds like you may have caught a bit of it there.

Exactly what I want in my version of a dunkelweizen I have planned.

That's what I was thinking and it makes sense.

I think it's time to try kveik for summer as I'm more likely to ferment on the high side.
 
Just finished a rye saison with rosemary and lemon from @samale . What can I say ...I was a little concerned..alot of flavours going on in a beer. I'm not usually one for herbs in beer outside of coriander and orange peel(sometimes 😉). It's a well made beer and it was refreshing and carbonated so hits the saison box. As it warmed up it was a little too herby for me, although the lemon didn't balance it. It was well brewed and I'm sure it would be somebody else's cup of tea👍🏼. Were you happy with the outcome?

Living on a building site is making getting the garage a difficult and messy task. The step into the garage is over 2 foot high, not easy after a few pints.

So I have decided to bring some cans into the house. Obvs I had to fill the glass first, so starting with a sabro porter.
Should have filled a bucket acheers.

The flavour is still to strong for me. I was actually meant to say to leave it a few weeks. @Hazelwood Brewery will you put that one away for a while.
It's my first time brewing using rosemary I used 5g. If I was to brew it again I would reduce this.

I would have spilt it climbing out. Can't find the key for the front garage door which would make this easier. Perhaps a job for tomorrow. I know there are a couple of keys in a jar of about 50 keys that we still have attributed since buying the house 3 years ago
