A QC on my latest SAISON! to check things are going as planned...
Yep,its carbed..opened with a nice "psst"...nice spicy and a little floral on the aroma from the saaz and the HH..very clean tasting,I think I changed to pilsner malt for this one,soft spiciness and a dry finish. As I thought it's needs more time for the SAISON taste to develop..but it won't be long. I'll leave it another few days inside then it's off to the brew shed with it!
Hmmm...getting a lager/Saison thing going on with this as I drink it...

I am really enjoying this one, deliciously malty a bit of dark inverted sugar and caramel with a slight bit of spicy pine on the finish. It's almost like Christmas in the bottle. I think I have been inspired for my next brew.

I'm a sucker for a Christmas beer. Never brewed one though. Is that one spiced?

No I don't think so, it's almost like they used saaz possibly? It's really nice, I think I am going to do something similar but hop with saaz and Simcoe to get the spicy pine thing.

I too am a sucker for Xmas ales they are usually really good too and I am usually not disappointed.

i haven't, knowingly, SAISON'd. think i want to.
on my triple IPA. have tomorrow off so the 9.4% is appropriate.
current ale batch should be ready to head into my very first PB tuesday.
 
I guess it's mostly about the malts and spices, so the lack of yeast character won't be an issue?
I don't really know to be honest, but I don't like S-04, Windsor, or M15 so I didn't have too many other choices for a dry English yeast :confused:

Actually @Pennine's description is bang on, I've always gotten a bit of a Belgian impression from Old Tom.

I used liberty bell MJ M36 in a stout recently and thought it was a great dried yeast
