What do people use bananas for and when do they use them?

|Is this for brewing or eating... I can give you a few food recipes.... never heard of bababas being used for brewing except adding a few to give the wines extra body, but I've never heard of a banana wine...

If you google 'how to make banana wine' there are quite a few recipes. I found one the other day that used raisins to add extra body to it. When I get a bit more experienced I want to try making banana wine.

I stuck a very ripe one in my parsnip wine. Over-ripe bananas produce a lot of volatile organic compounds (esters I think) that are similar to those you get in a well-rotted dessert wine. In my parsnip wine it's given it a definite Sauternes quality. It also kicked off brewing all by itself and I think the banana provided the yeast :thumb:

CJJB reckons (if I remember right) a well ripened banana can be added to any wine must, to add body.

ISTR finding something about a sort-of-ale made from plantain when I was Googling a while back, too.

You can also use bananas as a clearing agent too according to the CJJ Berry Book. A well ripe one placed next to fruit will also ripen them too.

I can't imagine wanting to drink banana wine :sick: but do let us know how it turns out if you make it!

Over-ripe bananas are excellent for banana bread and muffins. Google search "best banana bread/muffins", get your apron out, and you'll be glad you didn't try to ferment them

I started a gallon of banana wine just over 3 weeks ago and its still bubbling away in the primary DJ. I modified an old CJJ Berry recipe to suit me, and so far I'm happy with it.

I've stuck a straw into the DJ and its very powerful stuff, but very young and will need a fair bit of ageing, however the taste certainly isn't weird or gross. SWMBO also tried the wine and liked it.

I'm happy to share the recipe if you want it, you'll need about 4.5lb of very ripe bananas.
