Have been posting actively on Jim's for quite a while but a few other NCBA members extolled the more relaxed vibe here at meeting yesterday so here I am.
I like making the beers I can't easily buy - European Ales and dark lagers, Belgian beers and twisted takes on British classics (like my smoked rye stout and current 4 versions of 4 shades of stout).
Taking a wee rest from brewing at the moment until I have some time (and am allowed to shirk off baby care) to get to summer beers out using the NZ hops I have, also palnning a "Saison de Sauvin" using Nelson Sauvin hops and then first experiments with letting lactobacillus and brettanomyces loose in a fermenter when I use the "Berlinner Weisse Blend" to make a Leipziger GOse for summer. Then maybe an Orval type after that once that yeast is back out.
