Using a mixed gas - advice please

Hi all,

I brewed a Brown Porter (Greg Hughes epic recipe). I thought it would be nice using a mixed gas so I have got a 70/30 (N2/CO2) mix. Also a new regulator and stout tap.

Now, what do I do? Do I carbonate as normal with CO2 and dispense with mixed gas?

I'm sure I heard to carbonate with CO2 as normal and then dispense using the mixed gas - but dispense at a high pressure, 30psi.

Any advice would be great.

Personally I would use the 70:30 to carbonate and serve. You will get some CO2 dissolving. I assume you don't want it very carbonated, that's why you are using 70:30? Start with 70:30 then test, if it is undercarbonated for your tastes you could hook it up to CO2 for a while. It's easier to put more CO2 in, it's difficult to take it out.

These are just my thoughts, I haven't used 70:30 before.
