I made my first TC (using ASDA value apple juice) a couple of months ago and must admit it was good after a month in the bottle. As I have 5 dj's empty at the moment I have decided to run a trial with the view of picking the best for a 23litre batch.
So far I have got:

4.5 litres Pressed apple juice
1/2 tsp tannin
1tsp pectalose
1/2 tsp citric acid

3.5 litres apple juice (probably ASDA value)
1 litre Apple and blackberry juice
1/2 tsp tannin
1tsp pectalose
1/2 tsp citric acid

4.5 litres apple juice (probably ASDA value)
1/2 tsp tannin
1tsp pectalose
1/2 tsp citric acid
3 chunks crystalised ginger

And then two others. Any help on these or comments the ones I've decided on already would be most welcome

I've seen a recipes involving cinnamon sticks somewhere in this forum, cant help you anymore than that im afriad :thumb:
 
Mmm apple and cinnamon is a good mix, must try that.
I just started my 6th gallon of TC, have varied juice/tea/yeast, and though we have tasting notes for the first 2 they're a bit vague.
I asked the missus to rate #1 and #2 out of 5 and she said she couldn't as it was 3 weeks since she drank #1, but she thinks #2 was better.
We open #3 tomorrow, with our traditional Friday night curry. Fingers crossed: it's the one made with Lalvin Bourgovin RC212 red wine yeast.
 
I've never bothered with pectolase. I've used Lidl apple juice or apple nectar and they clear OK without it.
So maybe that could be your other variable - leave it out.
 
I am new to TC like yourself, I am going to try one using a grated bramley apple in the base recipe, I believe it adds acid that is missing from the dessert apples used in supermarket apple juice. Good Luck with your experiment, tell us which one you prefer when you are done. :drunk:
 
I tried adding the juice of a lemon to a gallon batch, as the previous batch had been a bit limp-tasting (if that description makes any sense), but it didn't have any noticable effect, so more than 1 lemon would be used if I were to repeat.

I also tried adding 2 tins of strawberries to a gallon. The result was a bit watery, lacking in both apple and strawberry flavour. Yet still drinkable. If repeated, I'd strain the strawberries from the syrup (I included it last time, hoping it'd impart more strawberry flavour), and possibly use 3 tins in a gallon.

Sorry it's all a bit negative, rather than positive, but hope this is of some help.
 
Well, the trial is under way but due to poor planning on my part is is a bit different from my first post

I have got:

1 gal using pressed apple juice
1 gal from concentrate with varying sweetner added at bottling stage
1 gal from concentrate plus ginger (I used one piece of stem ginger and I had no crystalised)
1 gal from concentrate plus a large handful of blueberries from the bush outside my back door.

They are now bottled (one bottle includes some blueberries that got sucked through the syphoning tube :whistle: )
I now have to patiently wait an month or so before tasting.
