Using up a bag of shelled pea pods from the garden, I added them to a basic tea wine recipe. 600g pods,
200g of raisins, 1 thin sliced lemon, 10 twnnings assam tea bags and left overnight to steep. Removed lemon and tea bags. 1 kg of sugar heated with some of the juice to dissolve with 1tsp of bentonite and put in a 10L bucket with airlock for a week, then will transfer to demijohn and top up with more cooled tea.
It's my first tea wine, and I may have overdone the length of time to steep the bags, but time will tell....
