Too low FG

Hey,

I tried brewing the Kölsch recipe from BCS, and the targeted OG and FG was 1.048 and 1.009

My FG was a bit higher at 1.049, and my FG ended at 1.005. Mash temp, was around 64-66C.

What can i expect from the low FG? Will the beer be unbalanced (it tasted great from the bucket)? And what is the cause of the low FG?

I used Safale US-05 (so you can say its more of a blonde), and fermeted at 14C for 2,5 week, before one week at 22C.

with those figures you should get around 5.8% but I would be dubious if the 1.05 reading is correct

Thx, for reply. Ive never had S-05 go this low, but its mainly pilsner malt with some vienna, so no rly specialty grains, that might be it too. The mash temp, is also a good point, doh the recipe called for 65C.

I just hope its not gonna be to alcholic in flavor when its done conditioning.

I'm relatively new to AG, but my last four BIABs have all gone right down to 1.004-1.005 - and with a variety of yeasts (SA05, WLP300 weiss, and 1469 W Yorks). Someone mentioned that this can be a characteristic of overnight mashes, was this one? This is a bit of a shame for me, the overnight fits really well with the family schedule, but with high mash eff and low FG I'm having to reduce the grain bill to avoid getting too overstrength results.

surely that's the aim of a high efficiency ? It saves you money.

Well I guess, but as the mash eff turned out higher than my average, and the Tim Taylors 1469 wasn't expected to go so low, I'm looking at a 5.3% Landlord attempt
 
High efficiencies are good - just use less grain and save money. My first AG only went down to 1.016 because I mashed high as I didn't know how much heat I'd lose and I didn't realise it would affect the fermentability of the sugars.
