Yes a fridge with a heater in the bottom and a temp controller. Very similar to brewing but you have to control humidity as well usually by placing a bowl of water in the bottom or as I do cover the cheese with a tupperware box. This was probably my downfall it was too warm and humid.
 
The actual fridge with temp control and a bowl of water will get a humidity of about 75% but I really need 85% so I may try a tray with a larger surface area and not use the covers.

I have seen set ups with a humidity controller (similar to an STC but not :wha: ) A mister and a dehumidifier as well as the usual heat and cooling control :whistle: :whistle:

I like a bit of stilton, but really just a bit. There is no chance I could get through that much in a year!

I tend to put it in pork meatballs more than anything
