I would keep my eye on those pet bottles, 1018 is a little on the high side, my guess is that it'll continue to ferment so you are going to have to relieve the pressure now and again.
As for the sulphiting and potassium sorbate additions :thumb:
I always add extra apple juice when I keg, as you say it gives back a little sweetness and apple flavour :
