Hey all

I hope this is the right place to post this.

I am planning on making 'Clockwork Tangerine' from DIY Dog, but the recipe states to use Tangerine Extract. I have looked everywhere I can think of to source this. Has anybody made this in the past, or know where to source Tangerine Extract from? I can only seem to find it in the States.

Also open to alternative suggestions that you think may work in place of the extract.

Thanks!
Mick

Good luck finding that on a home brew scale.

You might have to buy a drum full and bottle it up for the rest of us!

You could approach the maltmiller as they sourced the Elvis Juice grapefruit extract.

It sure seems that way! I found one in the States but it was $20 just to ship it over here which for 50ml of extract is crazy!

I might contact Maltmiller and see if it is something they would source. Hopefully they will!

Thanks

That's a good shout, I am happy to put in a bigger order if more people want it to keep the costs for everybody lower athumb..

I have never done this but know that others have used orange peel to create an orange flavour so presumably the same technique could be used with tangerine. I recall that the method is to peel the fruit carefully to avoid the the pith then sterilise the strips in vodka. The peel is held water at 74° C for 30 minutes or so in a mesh bag together with any hops intended to be infused. The liquid is then added to the FV at yeast pitching time after cooling appropriately. An alternative to sterilising in spirits would be to boil the peel but obviously much flavour would be lost. I got this technique off Hazelwood and claim no direct credit!

Yeah I have done a couple of batches now with orange peel. Although it has been ok in a couple of brews, the flavour hasn't been as strong as I was hoping. I have read that the extract is much stronger so you don't require as much of it. Maybe me just being lazy and hoping to throw a few drops in :D

I used a different method to the one you have mentioned, I put a bit of peel in at flame out and then added the rest when fermentation started to slow / come to an end along with a couple of Oranges that I thawed out and froze a couple times to try and get as much flavour as possible but didn't get the desired flavour profile. I might have to try a little experimental batch with the method you have mentioned and see how it turns out.

@Mick_Brews have you tried contacting Brewdog? Since they were considerate enough to publish the recipe, they might as well sell you some ingredients too.

Apparently they are soon to be setting up the DIY Dog store where you can buy ingredients etc from them, but they haven't gone live with it yet. Hopefully they will have it available when they do!

I brewed a clone of clockwork tangerine before Christmas and used Nielsen Massey orange blossom extract, available at some supermarkets. I got mine from Waitrose. If I brewed it again then I would probably add more than Brewdog state but I was not disappointed in the outcome. It will get you pretty close to the real deal.

Awesome! I did see that when I was looking for the Tangering Extract but wasn't sure if it would work. Think I will get a bottle of that and see how I get on.

Thanks !!

Look for Monin Tangerine Syrup. It's what they use at Costa coffee and can be bought at a few places in the uk

Thanks!
I'll have a look at that too.

Might do a split batch between both products and see which one turns out the best

For aroma, and some flavour, have a look at “Special Ingredients” Clementine flavour drops. The smell is intense and to die for.

Just don't do what I did. Put a bit on your finger and lick it! Theres a good reason such a small amount goes into 23 litres. It was intense.

Thanks everyone for all the suggestions. I have ordered a couple and will do some testing to see which I prefer.

Cheers! acheers.
