Looking forward to getting stuck in from wet and green Co Meath ROI.

I am this moment drinking my first elderberry wine attempt - its now nearly 2 years old and although a bit porty, its not a bad companion for a one finger typist.

I've also well glugged the most delicous elderflower wine from last years flowers. When chilled it was delicous - quite dry and bloody strong.

So I intend to stick to the straight path of what works this season ie elderflower in June (fizz, champagne and wine) and elderberry in October.

Also interested in finding out what these WOW recipes are, lastly seen as I'm wittering on I'll ask my first question.

I intend this year to use the standard 23 litre home brewers bucket, this I believe is fine for primary fermentation, but can it be used with an attached "bubbler" for secondary fermentation, I ask this as I fear the significant body of air between the liquids surface and the lid will spoil the contents.
 
Good to hear from what I presume is another Taf in Ireland? I'm not officially Welsh, but did live in Wales for nearly 20 years, so picked up the nickname when I came back, and it stuck. I've done a few elderflower wines myself, but added too much sugar, as was following old CJ Berry recipe, and they came out too strong and sweet. One of them is now drinkable after 3 years, but only really as a shot or with a mixer added. I will probably make some more this year, as Elderflower grow in my garden, but will make it a lot lighter this time. Grain brewing is my main obsession, and Ireland is starting to catch up a bit with beer choice, but might be a bit scarce in Mayo, although I understand that Tesco has started selling much more craft beer than it used to in Ireland.
 
Hi and Welcome.

Like you say the 23L buckets are fine for primary but i would worry about oxidation of the wine in them. You could use a 23L carboy (glass or PET) though. Some people use the lage water bottle you get for drinking water coolers.
 
yes there is a few craft breweries springing up this neck of the woods - i think they got a reduction on excise last budget.

will get the carboy this week as I'm now going for larger quantities with my new batch of elderflower wine / champagne or maybe a bit of both at bottling.
