Here goes janulka, upscale the juices if required but here 1 gallon recipe. I usually do a 8ltr batch in a 10ltr fermenting bucket.
1ltr pineapple juice 100%
3.5 ltr AJ 100%
2tbag tannin in 250ml water, 8 sweetener tablets added.
Half TSP pectolase, citric acid(not essential), nutrient.
5g cider yeast.
Going to try this one today. :) do you bottle carbonate it after or leave it still. Thank you very much!
 
I have found some pear halves in grape juice in home bargains and put on some pear/apple juice wine today 10l
6tins of pears - blitzed
3l apple juice
5 green bag brew
1.5kg sugar
Pectolase
Yeast and nutrient
Done in 25l fermenter
Water to 11l to take crud into consideration
Will strain after a week into carboy to finish and then split into 2 demijohns to condition and clear
Hopefully will be a good one :)
Will probably add 5clicks of sweetener into each demijohn if too dry to bring out fruit flavour

Sounds good. I've been eyeing up the peaches in grape juice in asda for a while. I'll get a few tins next shopping day.

Hope it turns out well. Tinned peaches in grape juice That I can vouch for makes a wonderful light wine :) done that one with 3 lidl big tins(800g or so) peach halves in grape juice, could not fine any in grape juice in Asda for some reason... only in light syrup - that was probably best white I have made. Together with the pineapple/apple grapeless WOW - was not sure to start with but after couple of month in bottle is wonderful summer wine.

Did you take a sg? Or sugar totals?
 
Good afternoon everyone. I've attempted to make my first bash at the WOW red grape and apple juice wine which was started on the 7th August. Everything so far looks as it should (i assume), my question relates to the clearing of the wine. I added the finings after racking the demi john into a clean demi john, so my question is does the wine have to be perfectly clear as in the videos posted for it to be finished and drinkable? I have just re-racked the wine again into another clean vessel and added some more finings to hopefully help clear it better, but obviously im not sure it is supposed to be clear/see through if that makes sense?
Any help would be appreciated.

Had it finished fermenting?

Did you use stabiliser?

Did you degas?

How long had the fining been in the wine when you decided to re-rack again?

The wine should be clear if all the steps before adding the fining were followed and the fining was given time to do its thing.
 
Hello there Chippy, thanks for getting in touch, having just looked at the video again, ive done exactly as the video shows. The hydrometer reading is currently 992 so im assuming all the sugar has now been converted. i shake the demi everyday a couple of times to make sure the co2 has gone so cant see that being the issue?
PS The wine doesnt taste that bad as it goes as i had a little sip when re racking this aft.

If you only shook the DJ a couple of times it won't have released all of the CO2 this can cause slow clearing due to sediment being trapped in the tiny bubbles.
 
So am i the to assume then that this wine should never be transparent like the orange one in the video?
 
Make sure it's fermented fully.
Make sure you Degas fully. (I think this is where you went wrong this time)
Make sure you add stabiliser.
Add finings last and leave until clear, clearing time can vary depending on which fining you use.

Can I just check - are you shaking the demijohn after you added finings? That should be done before. Once finings are added after degassing leave it to sit. Only thing movement wise after finings are added is to slowly rotate demijohn, without picking it up, to dislodge any sediment that catches on the side of demijohn, otherwise leave to sit and let gravity do its thing.
 
Hello there, i have been shaking the demi john after the fermentation has finished a good few times a day to release the CO2, not shook it after adding the finings only let it do its stuff.
The only thing i have done is after adding the finings over a week ago was to re rack the wine again and add more finings to help it clear?
 
Did you use pectolace when you first made it?

If you didn't you have pectin haze and it will not clear quickly, if you did add pectolace you can either add more fining or drink it as it is.
