Just got myself 2kg of strawberries for 4 quid so going to do a wine with them.
Had a look in the old CJJ Berry book and it says mush up the strawberries in 4 pints of water and leave to soak 24-36 hours? Then top up with cold and re rinse the pulp to fill the demijohn.
Is this a cold water soak or does anyone pour boiling water on them to soak as it says add 3lb of sugar during first soak?

Just an update - did a search on here for strawberry wine and found nothing - hence the non replies me thinks.
But had it soaking for 36 hours now and smashed up the pulp with a spud basher then strained through muslin in to a demijohn then rinsed with a further ltr of water and added that. No mention in recipe but just added a campden tablet and will add the citric, tannin, pectolase and yeasties tomorrow.
SG came out at 32 Brix - 1.120!!

Just thought i would share this - if it works
Saw something mentioned in CJJ Berry book about yeasties behaving like little bees - this is youngs super wine yeast compound busily at work after a week -

I made strawberry wine in December 2010 and it worked out great - one of my more successful brews. I bought 3lbs of strawberries for just £1.50 (the market stall was closing). I'll definitely be making it again when I can find some cheap fruit.
