Hi,

planning my first stout to trial soon and was wondering what you guys use for the yeast? I am planning a creamy, malty sweet stout bittered to around 30ibu. I am guessing that good old nottingham will do the job?
 
SO4 is good in a stout . . . much better than it is in pale beers

I like Windsor as well . . . The fruity notes go well in a stout

Liquid yeasts - Irish Ale is an obvious one
 
Dis a stout last weekend using wyeast irish ale .. can't speak for the taste yet, but I've had a nice steady fermentation from saturday to today (so far!).

Mmmmmm this thread is making me want to get another one on, off to check ingredients bin... :drink:
 
I did a dark beer (not really a stout - an old peculier clone ) with nottingham yeast that turned out lovely :thumb:
