Small batch Lemon Saison

As I enjoy the saison type of beers (along with most other styles), I decided to have a go at my own concoction which I decided would hopefully turn out as a saison with lemon tones.

4 litre batch

720 grams of Pale Malt
50 grams of Munich Malt
50 grams of Bohemian Malt
50 grams of Torrified Wheat (I didn't have any wheat malt)

9 grams of EKG hops @ 60 minutes
5 grams of Saaz hops @10 minutes

Juice and zest of 1 lemon @ 5minutes

OG:- 1.042

5 grams of CML Saison yeast

I'm thinking the gravity reading is a bit low as I was kinda looking for an OG of 1.054.
Fingers crossed it's going to be at least palatable :?:
 
I had a three fruit marmalade saison recently and I'm planning on replicating it. The brewer said they added the juice and whole rinds of 4 oranges, 2 lemons and 2 limes to secondary for a day or two. It was amazing and had a great citrusy/marmalade taste.

That looks like a recipe worth doing. Unfortunately I will have to add it to the ever expanding list of 'need to do' recipes :cheers3:

Still need to do a cherry chocolate stout and a lychee IPA before the dates run out on the puree.
 
What volume is the marmalade recipe?
My recipe that I linked to is for 30L into the fermentor. I think the original one that I based it on would have been about 23L. They put 4 oranges, 2 lemons and 2 limes in secondary. For 30L I was thinking of upping that to 5 or 6 oranges and an extra lemon or lime.

They look lovely. I never use clear bottles for fear of the beer getting light struck but they really work here. It looks like a lovely lemony drink.
 
Cracked open 3 bottles last night. The taste was really nice, however they were as flat as a pancake. I've put a couple of grams of sugar into the remaining 3 bottles, which I'll leave for a while and hopefully they'll be a lot better.
