I plan to brew this on Saturday :party: ...any advice / anyone done similar?

I "no chill cube" so 15 min and flame out hop additions become, flame out, then dry hop to fermenter to account for extended time at temps where isomerisation can occur.

This hobby is all about personal preferences so there is never going to be a right or wrong. A couple of things to consider from an opinionated brewer.

The ibu appears to be a little light for the gravity so you might find it a little sweet. My own rule of thumb for a bitter is to try and achieve a IBU number that is roughly 75% of your intended Original Gravity. So I would be aiming for an IBU of around 35-36. If I am brewing an APA I would go a bit higher than that - for example my SNPA clone had an IBU that was 110% of OG (OG 50, IBU 55).

I would also be tempted to throw in some aroma hops at the end of boil before you transfer to the fermenter to get a bit more in there.

Depends on what you like,I like my pale ales to be about 5% and around 45 ibu,I'm drinking one with Amarillo and Cascade at the moment,and it's lovely,I've got a Bluebird clone that I got a bit carried away with,which is 5% (I know,I know),and the ibu is only 34,and it feels too malty and distinctly under hopped,when drunk back to back with the original.I think you'll have a nice easy drinking pale ale,but it won't show the Simcoe at its best IMHO.
