No use to anyone this year, but I am just enjoying my pint of Santa's Winter Warmer (code name kick ass Santa) and it is tasting pretty good. Not amazing, not with the freshness of whole grain, but good non the less. The secret? 3 months maturing! I think for next year I will make my Christmas ale in July to give a good 5 months maturing. Obviously high alcohol, high hops, spicy fruitiness will ensue!
 
I'm going to do my barley wine for next winter in Feb, and I am leaving 5 bottles of elderberry Stout made in september until next Christmas so that will be 15 months old. :thumb: :thumb:

Hmm, good idea. I think because I want to brew a barley wine fit for the vikings, I might just do a micro batch, say 5 litres. I say this as I have some 5 litre demijohns, so easy to do some secondary fermentation in them, and maturing of course.

Anyone know a kick ass recipe for barley wine?
