i made up a cheepo kit and used 50% molasses and 50% demerrera sugar. i called it my 'black sugar brew'. having tasted the samples taken to check gravity i realised it was going to be very bitter. i decided i would make another identical brew immediately afterwards.

so i bottled the one and immediatley started the next using the same kit and same mix of sugars.

last night my friend and i sampled the 'black sugar brew II' along side a nicely rounded out black sugar I. there is little if any similarities in flavour at all. black sugar brew the 1st has turned into a very good beer. black sugar II suggests it will also be very good but it doesnt have the bitterness of the first.

i may never be able to make the black sugar brew again if i tried forever, and it is a shame as i only have a few liters of it left. maybe i should store it and leave it to the grand children, or bury it in the antarctic for some future race of man to discover. no, im going to drink it all and toast with every sip what was a marvelous and unrepeatable brew it is.
 
I guess the fermentation procedure is as big a factor on flavour as ingredients!
