Rye beer recipe idea s please

Thinking about brewing a rye of sorts came up with the following

3000g pale malt
1000g rye malt
500g Vienna
100g carapils

Hops

90 mins 30g columbus
15mins 25g of both cardinal and junga
0 mins 25g of both cardinal and junga

Ferment with us 05

23 litres

Looking for something l8ght fruity and spicey

Got amarillo,euruka bobek aurora cascade and brambling cross in freezer

Got light n dark crystal malts bit of chocolate. Carapils and I think abit of wheat
 
Anyone any clues on this

Original recipe looks fine. My rye with Amarillo is one of the nicest beers I've made. Would work with Columbus and cascade well.

I'd not go too complex on the grains, it could become muddied.
 
Too much rye. If you go much above 10% you run the risk of getting a stuck mash. Unless you start adding rice hulls etc.

Also you need to think about balancing the crisp'ness of the rye against your hop additions in your recipe.

Generally I find you have to go about 8-10 IBU's back from where you would "normally" be. Otherwise it can be a bit too bitter if you know what I mean.

But Columbus/tomahawk is my all time favourite hop. Maybe next to mosaic or Azzaca.

Flavour-wise you can go up to 20-25% rye without issues but as stated above, it will be a little harder to sparge (depending upon system - no issues with BIAB etc). I normally use 20% in my rye APAs so wouldn't hesitate going with your original recipe.

For a nice, fruity APA I'd be looking at a mix of amarillo, cascade and columbus.


EDIT: If you do go with your original recipe, just take notes and dial back the rye next time if need be. At the end of the day, it all comes down to personal preference/tastes.
 
I was looking at the american rye beer in the Greg Hughes book but got scared by others comments that they ended up with a sticky rank mess.
