Releasing excess carbonation from bottles

I have a batch of beer that is really good but I want to enter some into the National Craft Brewing Festival in September.

However the beer is overcarbonated (my bottling opportunity was a couple of days earlier than I would have liked). Is there a safe way to reduce the carbonation but retain a decent level fizz. Can I just open and recap or is there a technique to it?

Any hints greatfully received (except from the the more competitive types who are also entering beer :lol: ).

I think as I am going to enter them into the CBA Festival that I will recap with fresh crown caps. I don't want to worry that they hadn't resealed properly.
 
I had the same problem with a lager i did dunfie, I just popped the cap then recapped with fresh caps about 5 times until I reached the desired amount of carbonation, it helps if you chill em a bit as if you do it at room temp sometimes you tend to loose more beer than CO2
