I was lucky enough to be visiting friends in the Sonoma Valley in California (just north of San Francisco) over Easter, and various conversations were largely dominated by brewing talk 🙂 Two amazing beers I was introduced to were the famous Pliny The Elder from the Russian River brewing company (I was even driven to the brewery tap in Santa Rosa to have it fresh from the keg!) and also Red Seal Ale from the North Coast Brewing Company, which is an American Amber Ale. Not a type which would necessarily have piqued my interest, but it was just lovely; a perfect balance of maltiness and American hops and very, very drinkable. I really miss it.

So I had a search around and managed to come up with the following :

5.0kg Pale Malt (EBC 3.8)
0.7kg Munich Malt (EBC 19.6)
0.4kg Crystal 75 (EBC 147.7)
0.03kg Roasted Barley (EBC 1300)

Mash In : 68C : 60 min
Mash Out : 75C : 10 min

43g Centennial [7.6 %] - Boil 60.0 min 29.5 IBUs
43g Cascade [7.1 %] - Boil 10.0 min 5.8 IBUs
25g Centennial [7.6 %] - Boil 10.0 min 10.7 IBUs
15g Cascade [7.1 %] - Dry Hop

I collected the water from Spotless at lunch time and am looking to get the brew on tomorrow morning. I really hope it delivers the goods - feel free to add constructive criticism or suggest changes! Not that I have much scope for modification because I ordered it as a recipe kit from TMM, but I have some other American hops in the freezer (Mosaic, El Dorado) if anybody thinks it's lacking and those would add anything.
 
All went according to plan! I finished at 1.050 instead of 1.055 and I’m not entirely sure why, but neither am I particularly bothered. I forgot to whirlpool but I’m not going to beat myself up seeing as I was baking a birthday cake at the same time.

Came out a lovely colour and the bitter wort tastes amazing. Really looking forward to this one!
