Hi All,

I've had an American IPA in the FV for 12 days now and had planned to bottle this coming Saturday. OG was 1.057 and target is 1.011. I've just taken a reading and it's 1.017 but no signs of fermentation anymore. I don't think I quite pitched enough yeast...

Do you think it will be ok to bottle on Saturday?

Also it's very cloudy...will this clear during conditioning?

What temp did you ferment at? Any chance it might have dropped too low? I would maybe give it a wee swirl to wake the little ones up and check the temp?
 
Pump up the temp a few degrees. I ramp up my temp at the end of the fermentation to fully maturate the beer. I do this because I want the yeast to consume some of the by-products produced in the high activity phase.

Also, it's pretty straightforward to calculate your pitch rate and or make a starter this will make sure your yeast has the best chance of getting through the fermentable sugars without issue.

The only other thing I can think of if you may have had a high PH in your wash.


EDIT: Just to add, once you are sure the fermentation is over move the beer somewhere cooler and that will help clear up the beer. I would wait till it does before bottling.

The target attenuation (80%) sounds on the high side - what yeast did you use? I'm always happy with 75% (~ 1014) :-)

I agree. Give it a stir to get the yeast back in action and let them finish the job.
