Option 1: Bottle it. Let it condition as normal at room temperature for 2 weeks, then pop the bottles in the fridge for at least 3 weeks before drinking.

Option 2: Rack it. Put the secondary in the fridge (if it fits!) for at least 3 weeks. Then bottle it, then condition at room temperature for 2 weeks.

(the period where the beer sits cold is called "lagering")

Thanks for explaining all this to me this will be my first larger kit it was a wilko the only think I changed was the yest brought a larger yeast so far it looks good tried a sample it tastes like lager will bottle it next week. I do not think the wife will be to happy having about 30 bottles of Larger ( I wish ) she will be saying where do we put the food etc in the Oven!I would reply of course that is where put the food! I see a flying saucepan coming my way:nono:So to keep the old Memsahib happy can I do this in stages say put 6 bottles at a time so at least I do not have to sleep in the garden :-(

If you follow the brulosophy method you don't need to rack it. I have done a couple of really nice lagers this way and i prefer them to most commercial stuff.

What is this brulosophy method Can you explain what it is please

Here you go. Basically its a quicker way of fermenting and conditioning. I can vouch it works and produces crystal clear Lager. When it was cold i was fermenting at 11c in the garage with a heat mat then crashing in my fridge. The idea is to ferment to bottle in around 2 weeks,2 weeks to carb.

I am in the crash cooling stage of the Brulosophy method now, will chime in when I am drinking it...
