Quick S-04 question..

I've done the Greg Hughes Christmas Ale recipe substituting the yeast for S-04, S.G 1.065 and its down to 1.010 for a nice 7.2% after 9 days. Its pretty much dropped clear and looks like its done. the Airlock has been still since day 5.

My current practice is cold crash for 24 hours and fine with Gelatine for 24-48 hours in the fridge before kegging/bottling. Is there any benefit to giving it the full two weeks in Primary at this point or am I safe enough to begin the cold crash?

Agreed - I’ve just fermented a stout with S-04, went like a rocket at first then stopped after 5-6 days. Left it in until day 10 and everything tastes and looks as I would expect it to
